Normally, Gilgamesh, as a Servant, would also possess the ability to disappear: he could simply dematerialize, hewing to his spiritual form. And were this a Grail War, he would likely do so often as a matter of strategy. But here, this body of his is empowered by Bios rather than mana, rendering it corporeal as though he were a human. Though there is probably some magical equivalent that would let him disappear, just as this girl has done.
Yet he cannot say he has much... interest in such trickery, except when applied in strategic cases.
